There's a Japanese cuisine thread so might as well have a thread devoted specifically to the cuisine of Turkey. That way I can rant about the new "Turkish bistro" restaurant I went to. It was good food, but arranged more like a fusion restaurant. One of the entrees on the menu was "Fettucini con pollo". They didn't even serve rakı, but I suspect that may be due to the type of alcohol license they have. So I was a little disappointed because I was expecting a more Turkish experience. I understand though they need to "innovate" for the local Californian tastes.

One thing I wonder is that did they name Iskender Kebap as Iskender because Alexander The Great loved it? Also did they call it Alexander Kebap?

I don't think so, it was the invention of a kebap restaurant in Bursa during the 1930s IIRC.

Turkish cuisine (Turkish: Türk mutfağı) is largely the continuation of Ottoman cuisine, which in turn borrowed many elements from Circassian, Central Asian, Caucasian, Middle Eastern, Balkan and Greek cuisines.

Hatta o has sohbet geceleri bir semiz kuzu kurban edip, dilim dilim edip, bir demir kebap şişine eti geçirip iki başları ince ortası kalın, eti düzgünce dizerler ki bir zerre yeri birinden taşra dizmezler. Sonra bir araba tekerleğini kırıp kebap altına yavaş yavaş yakarak ateş edip bir çeşit kebap pişirirler ki sanki ilik olur.
Tatar arasında böyle pişmiş kebabı yemiş ve 100 okka boza içmiş Tatar çoktur. İşte bu derece hoş, yumuşak ve taze kebap pişirirler ki yeryüzünde öyle kebap pişmesi ihtimali yoktur. Araba tekerleğiyle pişirmek Tatar arasında şarttır.
