That's BS. I was in Ulan-Bator and I know Mongolian character.
Mongolians, generally speaking, are very friendly and nice people. They don't like bullying without serious reason.
Every country has a little bit of self-irony in its popular culture. So, does Mongolia. And there is a couple other similar Mongolian anecdotes, yet, it doesn't imply any kind of disrespect to the country.
Perhaps, your Mongolian friends are all extreme nationalists who start to fight any time they suspect any kind of implied "unfair" remarks towards Mongolia - that's very strange in my opinion.
My Mongolian classmate, on the other hand, is from a very respected family in Mongolia (dynasty or historians and diplomats). And he is real patriot of his country and people as far as I can understand.
