What about Altay and Hakas Turks? They're right there by Mongolia, so I assume there should be atleast a small population of them in Mongolia. If not, then I guess maybe they have some how been assimilated into Mongols.

As far as I know the Hakas and Altay Turks do not spill over the Mongolian border in large numbers at all - not enough to account for a significant population.
But if you look under the 'Uriankhai' (Uranhay) of my above post you'll see they are also known as Tuvans - I think they also include the small number of Mongolian-speaking Altayans who live in Hovd and Bayan Ölgiy. Uranhay is a kind of ethnic umbrella term for what are essentially Kazakhs too.
As for Hakas Turks I can't find any demographic stats indicating their presence, possibly they're just too few to register.

I found a map of the province of Govĭ-Altay, I was unaware there's a province named after them.

there is the Tsaataan, Turkic reindeer breeders. I think they number less than 1,000. but they are famous for their reindeers. Unfortunately some non Tsaataan people have been posing as reindeer breeders in order to cash in on the tourism.
